Building Health From the Foundation: The Power of Sofrito

Every great soup begins the same way — with a base. A handful of aromatics gently coaxed in oil until fragrant, sweet, and deeply flavored. In kitchens across the world, this foundation goes by many names: sofrito in Spanish and Latin cooking, soffrito in Italian, mirepoix in French. The ingredients vary slightly by tradition, but the core is almost always the same — onions, garlic, celery, and sometimes peppers and tomatoes — sautéed low and slow in good oil.

At Organic Soup Kitchen, this is where every pot begins. And it turns out, this humble starting point is one of the most health-protective combinations in all of food.

Why the sofrito base is so powerful:
